The BBQ sauce from Romantik Hotel Bären Dürrenroth adds the perfect seasoning and turns every grilled dish into a culinary delight.
Ingredients for 4 servings
- 30g salted cooking bacon, finely diced
- 30g clarified butter
- 1/2 onion, diced
- 1 clove of garlic
- 75ml Jim Beam Bourbon (40% ABV)
- 275g peeled tomatoes
- 8g tomato paste
- 40ml apple balsamic vinegar, barrel-aged
- 30g molasses
- 9g red chili peppers, deseeded
- 3g chili
- 55g reduced veal stock
- 8g mixed peppercorns, coarsely ground
- Salt and coffee oil to taste
Preparation
Sauté bacon, butter, onions, garlic, chili, and peperoncini. Add tomato paste and lightly roast. Then deglaze with bourbon. Add peeled tomatoes, molasses, pepper, and vinegar, and simmer for at least 3 hours. Then stir in the veal stock. Roughly purée with an immersion blender and reduce until the sauce has a jam-like consistency. Season with salt and coffee oil.
