Zero-Kilometer Philosophy – 100% Flavor. In a zero-kilometer menu, the kitchen team at Kartause Ittingen combines the best ingredients from its own butchery, market garden, farmstead cheese dairy, wine cellar, orchards, grain store, wood-fired bakery, and fish farm.
The offerings are guided by the season and what the surrounding area, the vegetable and herb garden, provides. Beyond the obvious, this also includes edible flowers for plate garnishes, Ittingen popcorn for seminar breaks, or verjus, a delicate acidulant made from unripe grapes. For products that the estate cannot supply itself, 95% Swiss products are used, preferably from selected local and regional producers. Meat comes from their own animals or from other nearby farms.
