In the Restaurant Mühle the focus is on sustainably and locally produced food. In keeping with the monastic tradition of self-sufficiency, products from the vegetable and herb garden go directly into the restaurant kitchen or are processed by the in-house producers. A cheese dairy, butcher shop, bakery, garden center, fish farm, and wine cellar supply fresh, local produce from the estate. There is probably no other restaurant in Switzerland supplied with over 200 products from its own estate.

In a 0-kilometer menu the kitchen team at Kartause Ittingen combines these products. The menu is based on the seasonal treasures offered by the surroundings and gardens. With its 0-kilometer menu, the Kartause makes an important contribution to regionality and CO2 reduction. The produce is of the highest quality and couldn't be fresher.

Every year, on October 1st, World Vegetarian Day takes place. For two days, Kartause Ittingen champions sustainable gastronomy and creates refined vegetarian delicacies.
